Gadi Moses’s Chocolate Explosion Cookies

Ingredients

3 eggs
1/2 cup sugar
350 grams dark chocolate
50 grams butter
3/4 cup flour
1 teaspoon baking powder
1 cup ground almonds

For Coating:

1 cup sugar
2 cups powdered sugar

Preparation

Melt the chocolate and butter together. In a mixer, beat the eggs and sugar for 5 minutes on high speed. Fold the egg foam into the melted chocolate mixture.

Add flour, baking powder, and ground almonds. Cover with cling film and refrigerate for 4 hours or until the mixture hardens.

Roll the mixture into 4 cm diameter balls. Prepare one bowl with sugar and another bowl with powdered sugar. Roll each dough ball in sugar, then in powdered sugar. Place them spaced apart on a lined baking sheet.

Bake at 190 degrees Celsius for approximately 7-8 minutes. The cookies will flatten and crack a lot, but they will still be very soft to the touch. They harden as they cool.

Gadi is one of the founders of Kibbutz Nir Oz, where he has been living for over 60 years. A father and grandfather figure, he dedicates a lot of time to his grandchildren, using it to spend quality time with them and to discuss a variety of topics. Gadi greatly enjoys a good drink with something sweet on the side, preferably chocolate or ice cream, and these cookies are one of his favorites! 

He is an agronomist by profession, and has mentored many of the farmers in the south. He is a respected expert in his field both in Israel and worldwide. A few years ago, together with his friends from Nir Oz, he planted a vineyard and established a winery where they produce wine for personal consumption.

Gadi was kidnapped from Kibbutz Nir Oz along with his partner of the last 18 years, Efrat Katz, their daughter Doron and granddaughters Raz and Aviv. Efrat was killed in the fields of the kibbutz on her way to Gaza, while Doron and her daughters were released from Hamas captivity after 49 horrifying days.
