Daniela Gilboa’s Moroccan Cookies

Ingredients

1 kilogram (about 4 cups) of all-purpose flour
2 packets of baking powder
2 packets of vanilla sugar
2 pinches of salt
1 and a half cups of granulated sugar
1 cup of coconut or almond flour
4 large eggs
5 tablespoons of vinegar
5 tablespoons of oil

Instructions

Preheat your oven to 180°C (350°F). Line baking sheets with parchment paper or grease lightly.

In a large mixing bowl, combine the all-purpose flour, baking powder, vanilla sugar, salt, granulated sugar, and coconut or almond flour. Mix well.

In a separate bowl, beat the eggs lightly, then add them to the dry ingredients along with the vinegar and oil. Mix until a dough forms. If the dough seems too dry, you can add a little bit of water, a tablespoon at a time, until it comes together.

Using a Moroccan cookie machine (or simply rolling the dough and cutting into desired shapes), shape the dough into cookies and place them onto the prepared baking sheets.

Bake the cookies in the preheated oven for 10-15 minutes, or until they turn golden brown.

Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Serve and enjoy your delicious Moroccan cookies with a cup of tea or coffee!

Daniela Gilboa, a 19-year-old resident of Petah Tikva, was kidnapped on the morning of October 7th from the Nahal Oz area.

Daniela excelled academically, graduating with honors in high school with a major in music. She is a talented musician who creates, plays, sings, and has even recorded several songs that are expected to be released later.

Roy, her boyfriend of 7 years, shared many school years with her, from middle school all the way through high school graduation. Daniela is known for bringing light wherever she goes, always surrounded by friends. She loves to laugh, do imitations, hang out with friends, and experiment with different styles.
